一、 产品介绍
有关营山诸多小吃，赞语最多的就是营山凉面。杜甫曾经形容凉面是“经齿冷于雪，劝人投此珠”。凉面在营山历史悠久，是营山县的传统名优小吃，一听到凉面，大家觉得都应该是夏季的食物，但在我们家乡，它一年四季都很受欢迎，在营山的大街小巷都能瞧见它的身影，它已经成了家乡人民生活中不可缺少的食物。营山凉面之所以如此受欢迎，主要在于它的口味，麻、辣、咸、甜、香五味俱全，
首先，它的面条非常的细嫩清爽，同时又具有韧性，嚼起来很有劲道。 其次，凉面中加入了丰富的辅料。包括香油、红酱油、醋、糖、味精、花椒油、红油、蒜泥、豆芽等，老板会根据顾客的口味，决定各自量的多少，在这些丰富的料中，值得一提的就是红油了，营山凉面采用的红油是我们县的特色产品之一，它的味道不仅辣，还很香，让人胃口大开。我们的凉面还有一个特殊的食材就是大头菜，看着凉面上覆盖着的大头菜，伴着绿色的葱花，就显得更加的晶莹剔透了，这是谁也难以抵挡的诱惑，这就是营山凉面之所以广为人知的原因。
二、 营山凉面与春节
春节大家都要吃饺子、汤圆，这是一种传统习俗，在咱们营山，还有一个与众不同的习俗，就是吃凉面，每逢正月初一，小城里就格外的热闹，家里的男女老少都穿上新衣，带着愉快的心情，成群结队的到街上吃凉面。春节期间，在营山县城的大街小巷，成群结队的人“抢”吃凉面的场景，着实让人眼前一亮，营山县有关部门负责人告诉记者，仅初一到初六短短的6天时间内，营山人就吃掉了3万余公斤凉面。这一数据更具体的说明了人们对凉面的钟爱。那为什么人们会选择在初一吃凉面呢？主要是在新的一年开始，老人希望健康长寿，中年希望工作顺利，生活愉快，日子红火，孩子希望天天快乐，大家都冲着凉面来了，希望在新的一年里一切都好。春节这天，到处张灯结彩，异常热闹，空气里弥漫着浓浓的香味，到处都是凉面摊，到处都是欢喜的笑脸，这也是小城一道亮丽的风景，凉面也成了一种长久，和谐，平安的象征，给人们带来了很多的快乐。城里的两面经销商更是忙得不亦乐乎，大家都冲着在新年第一天“吃凉面象征长寿”这一风俗习惯大干一场，在春节当天，营山县文化宫内的李凉面、东门口的王凉面、城守一小对面的蔡凉面、北坝街的李凉面及原棉织厂处等十余家特色凉面的生意尤其火爆，每家都有上千人吃凉面。当天，文化宫的李凉面的凉面小吃摊摆开了5米长的凉面桌，由于夫妻人手不够，特地临时请了八九个人打“下手”。卖票、抓凉面、放作料、打包……形成一条流水线，他们从早忙到晚上，也有很可观的收入。
三、 营山凉面的做法
其实，凉面的做法还是很简单的，在家都可以煮的，主要分为两个大的步骤。第一，就是煮面，煮面条时水要多、火要大，这样煮出来的面条才能不粘，面条要煮八九成熟，“断生”即可，若面条煮得太软太烂，就不能保持凉面的风味了。面条煮好后，要立即捞出用凉白开过凉，然后再捞出沥干水分，用筷子抖开面条，加入少许熟豆油拌匀，以防粘成一团。第二，就是要被辅料，可以切一些黄瓜丝，弄一些豆芽，豆芽在开水里焯一下，并把水沥干放在盘底，再把面搁在上面，最后依次放上盐、味精、花椒粉、蒜泥、酱油、醋、白糖、小葱、红油拌匀即是美味可口的红油凉面了。
四、 凉面的营养价值
古语中有“头伏饺子二伏面”的说法，其实，在夏季吃凉面的`风俗由来已久。早在宋代医书《本草衍义》中就有记载：“三伏中，朝廷做面，以赐臣下。”说明在当时就已经知道吃凉面可消烦止渴、祛暑除湿。在闷热、潮湿的夏天，来上一碗凉面，不仅省事，而且解暑开胃，凉面本身含有蛋白质、脂肪、碳水化合物等人体必需的营养素，其中加的辅料豆芽，黄瓜等含有丰富的营养物质，100克黄瓜中含有的水分约克, 热量千卡, 蛋白质克, 脂肪克, 碳水化合物 克, 纤维素克, 钙14毫克, 镁12毫克, 钾148毫克, 维生素毫克, 叶酸毫克, 维生素A74毫克. 还含有各种营养素, 黄瓜含有铬等微量元素, 这些微量元素可以起到降血糖的作用，对血糖的稀释有重要的作用, 对糖尿病人来说，黄瓜是他们的福音, 是最好的亦蔬亦果的食物。夏天吃凉面，能够让燥热的心情平静下来，给人很清爽的感觉，而且还能祛湿解表开胃。但值得注意的是，老年人、产妇、脾胃虚寒者应尽量少吃。
五、 营山凉面的发展
凉面，在全国各地都有，只是品种和口味都有很大的不同，我们的营山的凉面在我们当地发展的还不错，但是也存在着很多的问题，缺乏规范，没有形成规模。作为营山的一份子，我觉得营山凉面完全可以形成自己的品牌，就像川北凉粉一样。只有形成自己品牌，才能走出去，让更多人了解，才能获得市场的份额，品牌的背后是有着强大的文化作支撑的，营山凉面有着1400年的悠久历史，并且与“吃凉面长寿”的饮食文化结合起来，打造出一个有内涵的品牌，并且还可以推动其他饮食文化的发展，例如红油、花椒油、酱油等相关企业的发展，形成一条产业链条，能够带领更多的企业成长起来。

Firstly, I am very interested in the study of ambiguity. Ambiguity is a common phenomenon in all natural languages. As is known to all, in our daily conversations, ambiguity is often employed to achieve the effect of humor, thus creating a relaxing atmosphere and letting people feel at ease. Some jokes caused by ambiguity is very interesting.
Secondly, I have read several articles about ambiguity written by linguistics and scholars. I found my knowledge of ambiguity is very limited, superficial and nonsystematic. What I knew is just the tip of the iceberg. So I plan to learn more about ambiguity by this research.
Thirdly, I found many scholars have carried out numerous studies of ambiguity, but a majority of these studies are focused on single language separately. Articles about comparison between English ambiguity and Chinese ambiguity are not sufficient. So it is necessary to make further study.
For the above facts, I select this title.
Next, I will present the outline of my thesis. It consists of 7 parts.
The first part gives a brief introduction to the ambiguity and structure of the thesis.
The second part is literature review, briefly introducing the development of study of ambiguity and some scholars’s main views.
The third to fifth parts focus on three types of ambiguity in English and Chinese: phonological ambiguity, lexical ambiguity, syntactic ambiguity. In every broad type, I respectively list some detailed branches and cite some vivid English and Chinese examples to explain these ambiguity phenomena. But I put more focus on the third part and point out two differences of ambiguity between English ambiguity and Chinese ambiguity.
The part six will point out positive results by using ambiguity deliberately in daily conversations, advertisements and literary works.
The last part is the conclusion.
I hope by this contrastive research, we will have a better understanding of ambiguity in English and Chinese and apply it to our life and study.
